This is another version of that old favorite from the 80s, Welsh Rarebit. This recipe includes tomato puree, hot sauce and a muffin instead of toast. There is also no flour or Worcestershire sauce used in this recipe. I prefer the other recipe however, if you are looking for a spicy version then this could be it. Enjoy!
45 g (1 ½ oz) or about 2 tablespoons tomato puree
2 tablespoons water
60 g (2 oz) cheddar cheese, grated
Pinch dry mustard
Dash of any hot sauce
I english muffin, split and toasted
Combine all of the ingredients except the muffin. Cook in the top of double boiler, over boiling water, stirring constantly, until cheese melts.
Serve over warm muffin halves.
Best eaten immediately
Can be served on muffins then put under the grill to brown
Not suitable for freezing
Can be served over toast or crumpets
