A Tomato and Crab Salad Recipe

This Tomato and Crab Salad Recipe is versatile and healthy. The salad can be served up as a main or as a side dish. As a side dish reduce the number of tomatoes to one per person. It is also salad that is not that difficult to make. Ideal for those wanting to reduce their meat consumption, eliminate the mayonnaise and it would suit those on a gluten-free diet. Enjoy!
Ingredients
2 cups crab meat
10 medium tomatoes
1 cup finely diced celery
2 hard boiled eggs
1 lettuce
1 dessert spoon finely cut onion
Salt and pepper
Parsley sprigs
1/2 tsp lemon juice
Mayonnaise
Method
Blanch tomatoes to remove skins, make a hole in the center and scoop out a little flesh. Season and chill.
Mix crab, celery and onion, add lemon juice, and a little mayonnaise. Season to taste.
Fill tomatoes with the mixture. Sprinkle tops with chopped eggs and decorate with parsley.
Serve each tomato in a lettuce cup.
