Sauces form the basis for a variety of meals or are used as an accompaniment to meals. It is useful to have a recipe or two in your cooking repertoire. However, there are a number of sauces made from a basic white sauce. By adding ingredients the sauce can be adapted to suit a variety of dishes. The white sauce base is easy to prepare so it makes it very easy to make the other sauces. Enjoy!

White Sauce

Melt one tablespoon of butter or margarine in a saucepan. Remove from the heat and blend in two level tablespoons of cornflour. Stir in one cup of milk. Bring to the boil and simmer for one minute whilst constantly stirring.

Onion Sauce

Add one finely chopped onion with the butter. Season with salt and pepper.

Parsley Sauce

Add one or ttwo tablespoons chopped parsley with the milk. Season with salt and pepper.

Cheese Sauce

Add two tablespoons grated cheese with the milk. Season with salt and pepper and a little mustard.

Sweet Sauce

Add one or two tablespoons of sugar with the milk. Flavor with vanilla.

Chocolate Sauce

Add one or two tablespoons sugar and cocoa with the milk. Flavor with vanilla.
