This Tangy Citrus Salad is exactly as described “Tangy”. It is different from the usual Mediteranean Salad and tastes like Summer. It is not that difficult to prepare but you may not have everything just lying around, so some shopping may be required. It is easy and quick to prepare though, so the level of difficulty is not that high. Go on, give it a go. Enjoy!

Makes 8 to 10 servings

Ingredients

3 small grapefruit, peeled
3 oranges, peeled
1 medium cucumber, thinly sliced
1 small salad onion, thinly sliced and separated into rings
2 avocados, seeded, peeled and sliced
Fresh orange juice
2/3 cup white or red wine vinegar
¼ cup sugar
Lettuce either Iceberg or Rocket Mix

Seasoning: Salt and Pepper to taste

Method

Section grapefruit and oranges over a small bowl to catch juices; reserve juices.

In a large bowl combine citrus sections, cucumber, onion and avocado slices.

Measure reserved fruit juices; add fresh orange juice to make 1 cup.

Combine juice mixture, vinegar, sugar, salt and pepper; pour over fruit and other ingredients in large bowl.

Cover and marinate in refrigerator for 2 to 3 hours.

At serving time, use a slotted spoon to remove fruit and other ingredients from marinade. Arrange in salad bowl with lettuce.

Drizzle the marinade over the top of the salad and serve.

Hints

Eat fresh, not suitable for keeping overnight as the dressing will make the salad soggy.
