A Sweet Corn Fritters with Bacon Recipe

This Sweet Corn Fritters with Bacon Recipe is quite quick and easy to make as there are not that many ingredients. The method is easy and ideal for beginners or even children with the appropriate supervision. The fritters are great as a breakfast alternative or can be served as a small meal with some salad on the side. They also offer a meat-free meal if you skip the bacon. Enjoy!

Serves 4

Ingredients

2 tbs plain flour

1 tsp baking powder

Pinch of salt, pepper and cayenne

1 egg, separated

1 x 300 g can sweetcorn

Oil for shallow frying

8 rashers of bacon

Method

Put the flour, baking powder and seasonings in a bowl and mix in the egg yolk.

Add the liquid from the sweetcorn and mix to a smooth paste, then fold in the sweetcorn.

Whisk the egg white until stiff and fold into the batter.

Heat the oil in the frying pan and drop spoonfuls of the mixture, browning on one side, then carefully turn over to brown the other side.

Fry or grill the bacon and serve immediately, with the fritters.

Hints

Eat fresh if able but can be reheated the next day.

Keep leftovers in an airtight container in the refrigerator.
