The Sticky Date Pudding is a classic dessert, which has passed the test of time. You may be experienced or a first timer but either way this is a basic recipe and will serve you well. Despite the long list of ingredients it is not that difficult to make and this is comfort food at its best. Enjoy!
(serves 6-8)
Ingredients
1 cup chopped dates
1 teaspoon bicarbonate of soda
300ml boiling water
60g butter or margarine
¾ cup caster sugar
2 eggs
½ teaspoon vanilla essence
1 ¼ cups self raising flour, sifted
1 very ripe banana, mashed
¼ cup chopped walnuts
Butterscotch Sauce
1 cup brown sugar
150ml cream
60g butter or margarine
1 teaspoon vanilla essence
Method
Place dates and bicarbonate of soda in a small bowl.
Cover with water and set aside to cool.
Beat butter and sugar together.
Add eggs one at a time, beating well after each addition.
Mix in vanilla essence.
Fold in flour, followed by dates with liquid, banana and walnuts.
Pour into a greased 20cm round cake tin.
Bake in a moderate oven for 55-60mins.
Butterscotch Sauce
Combine brown sugar, cream, butter and vanilla essence in a small saucepan.
Bring to the boil, stirring. Simmer, without stirring, for 5 mins.
Serve pudding with sauce, cream and a light dusting of icing sugar.
Hints
Pudding can be stored in a sealed container in the fridge once cooled
Reheat or eat cold the next day
Can be served with vanilla custard or ice-cream
