What you can do with tinned Salmon?

Salmon Patties with Aioli is an easy recipe to make when short of time. We all have tins of food in our pantry that we think that we will use one day, but never do. How many tins of food do you throw away when cleaning out the cupboards?

Salmon Patties with Aioli is a great standby dish and easy to put together using ingredients that are probably already sitting in the cupboard.

This recipe makes use of that tin of Salmon but elevates it with the Aioli sauce and that recipe can be found here. Having a tin of Salmon and Tuna does come in handy so don’t forget that they are there and buy more. Enjoy!

Serves 4

Ingredients

500 g brushed (sebago) potatoes, peeled, chopped

415 g can red salmon, drained, skin and bones removed, flaked

2 tablespoons drained capers, finely chopped

2 shallots, finely chopped

1 egg, lightly whisked

1/3 cup (30 g) purchased dry breadcrumbs

Salt and freshly ground black pepper

2 tablespoons olive oil

Purchased dry breadcrumbs, extra, to coat

Method

Cook the potatoes in a saucepan of boiling water until tender. Drain well. Mash and then cool slightly.

Place the mashed potato, salmon, capers, shallots, egg, and breadcrumbs in a bowl. Use clean hands to mix until well combined. Season well with salt and pepper. Divide the mixture into 8 patties. Put on a plate and refrigerate for 30 minutes.

Heat the oil in a large non-stick frying pan over medium heat. Coat the patties in a thin layer of extra breadcrumbs. Add patties to the pan and cook for 2-3 minutes each side or until golden brown.

Hints

Refrigeration will help to firm the patties prior to cooking.

I always add the final coat of breadcrumbs before I place them in the fridge to firm up.

Don’t move the patties too much in the frying pan or they may break.

Capers and Shallots can be substituted with finely chopped onion.

Purchased breadcrumbs are recommended as they are finer in texture and coat the patties better than fresh breadcrumbs.

Serve with a salad, lemon wedges and aioli dressing.

Seafood Cocktail sauce can also be used to accompany the salmon patties.
