Orange Glazed Chicken A Hearty Meal for all of the Family
I ripped this recipe for Orange Glazed Chicken out of a magazine in 1986! That’s 28 years ago, and I still have it along with all of the other oldies. Orange Glazed Chicken is not something that we hear about all that often. It’s nice to try something different every now and then. Some of the ingredients may need to be specially bought. Once you have them, you’re ready to get cooking. I am sure that this will impress both friends and family because it is unusual. So follow the recipe and in next to no time you will have created a meal the whole family will enjoy.
Orange Glazed Chicken Recipe
Ingredients
1 x 1.5 kg Roasting Chicken
Seasoning:
250g sausage meat
1 cup fresh breadcrumbs
1 rasher bacon, chopped
1 chicken stock cube, crumbled
Grated rind and juice of ½ orange
1 tablespoon orange marmalade
1 onion, chopped
Method
Mix all seasoning ingredients together.
Fill into chicken cavity
Brushing Sauce:
Grated rind and juice of ½ orange
2 cubes chicken stock, crumbled
1 tablespoon orange marmalade
1 tablespoon melted butter
½ cup water
Method
Mix all ingredients together.
Brush liberally over chicken.
Bake 180° C for 1½ hours, brushing 3-4 times during cooking.
Microwave Instructions
Cook chicken on High for 10 minutes then Medium for 20 minutes
Allow to stand for 10 minutes
Turn chicken every 10 minutes during cooking
Omit the ½ cup of water in the brushing sauce, when using the microwave
Hints
Chicken is cooked when a skewer inserted into the inner thigh reveals clear juices
Ideals for serving with salad, steamed or roast vegetables
Try making the Glaze and use on chicken thighs instead of a whole chicken
