Although this recipe is called Chocolate Truffles there is another recipe named the same however the ingredients are different to this Chocolate Truffles recipe. As you will see this recipe has chocolate as one of the main ingredients and is covered in chocolate. I think the name is more appropriate for this recipe too. There are many variations too, which you will see further down under the Variations Section. I cannot wait to try some of those out either. Anyway although I love the Chocolate Rum Balls and the other Chocolate Truffle recipe, this one is definitely the more decadent of the three. Enjoy!
Ingredients (makes approx. 20)
125g dark chocolate
60g butter or margarine
¾ cup icing sugar
1 x 100g packet almond meal
4 tablespoons cream
150g dark chocolate extra
1 teaspoon copha
Method
Place chocolate and butter in a small microwave-safe bowl.
Cook on HIGH for 1 ½ minutes.
Stir in icing sugar, almond meals and cream.
Beat until smooth.
Refrigrerate for 30 mins until firm.
Roll heaped teaspoonfuls ofthe mixture into balls.
Place on baking paper.
Combine extra chocolate and copha in a microwave-safe bowl.
Cook on HIGH for 1 ½ minutes.
Coat truffles with chocolate using a teaspoon to roll in the chocolate.
Place on tray to set. Refrigerate until required.
Variations
Cherry Ripe Truffles
Replace almond meal with coconut. Reduce cream to 3 tablespoons. Wrap mixture around glace cherries. Coat in chocolate. Roll in shredded coconut.
Kahlua Truffles
Replace cream with Kahlua. Coat in chocolate. Roll in chocolate sprinklers.
Baileys Irish Cream Truffles
Replace dark chocolate with milk chocolate and cream with Baileys. Coat with milk chocolate. Decorate with swirls of dark chocolate.
Rum and Raisin Truffles
Soak 1/4 cup of chopped raisins in 4 tablespoons rum for 1 hour. Replace cream with rum mixture. Coat in chocolate, roll in cocoa.
White Truffles
Replace dark chocolate withwhite chocolate for mixing and coating.
Hazelnut Truffles
Replace almond meal with ground hazelnuts. Wrap mixture around a hazelnut. Coat in chocolate. Roll in crushed hazelnuts.
