I have looked high and low for a moist banana bread/cake recipe for years. I have tried a few which always promise to be moist but the results are varied. In fact, I still have those recipes, there is the Simple Banana Bread, the Banana Loaf, the Banana Cake and the aptly titled Moist Banana Cake. Eventually, I will link to these recipes when I post them. I stumbled upon this recipe whilst on Pinterest and thought I would give it a try. I could not give up my quest to find a moist banana bread, I thought. This Banana Bread recipe is the best moist banana bread that I have made to date. Does it mean that the search is over? Never, enjoy!
Ingredients
Banana Bread
3/4 cup butter softened
1 1/2 cup white sugar
1 1/2 cups very ripe bananas mashed
2 eggs
2 cups plain white flour
1 tsp baking soda
1 tsp salt
1/2 cup buttermilk
Cream Cheese Frosting
125g cream cheese at room temperature
50g unsalted butter at room temperature
230g (1 1/2 cups) icing sugar
1 1/2 tsp buttermilk
Method
Banana Bread
Preheat oven to 160-celsius fan forced
Cream butter and sugar
Add mashed bananas and mix
Add the eggs to this mixture
Mix flour, baking soda, and salt in a separate bowl
Add this mixture to the wet mixture and stir
Prepare 2 loaf tins (grease, and line with baking paper)
Pour the mixture into both pans
Bake at 160-celsius for 40-45 minutes and test with a skewer.
Let cool in the pans for approximately 15 mins and turn out on a cake rack to finish cooling
Ice when cool with the Cream Cheese Frosting
Cream Cheese Frosting
Using an electric beater, combine cream cheese and butter in a bowl until well combined. Add icing sugar and beat again. Finally, add the buttermilk and beat until the mixture is pale and creamy.
Hints
This cake can be frozen for up to 3 months
Slice and wrap individually to freeze and thaw quicker
Add half a cup of broken walnuts or fruit
Can be made as muffins
