Chicken Cacciatore

This Chicken Cacciatore recipe is so easy to prepare it is not funny. Just put all of the ingredients into the casserole dish and into the oven. That’s it, easy as. Great as a standby meal and easy on the pocket. You can also substitute the vegetables for what you have on hand. A great way to use left overs, it may not be an authentic Chicken Cacciatore but that doesn’t really matter when you are in a hurry, does it? Enjoy!

Serves 4

Ingredients

1kg chicken drumsticks
810g can crushed tomatoes
80g pitted Kalamata olives
100g sliced mushrooms
parsley for garnish
1 chopped onion
400g long grain rice for serving
Salt and pepper to season

Method

Combine drumsticks, tomatoes, olives, onions ad mushrooms in a casserole dish.
Season then cover.
Place in oven on low heat and cook for approximately 1 hour, or until chicken is falling off the bone.
Serve over cooked rice and garnish with roughly chopped parsley.

Hints

Season drumsticks with salt the night before.
Can be reheated the next day.

This Cheesy, Creamy  Chicken Pasta Bake is sure to satisfy the fussiest of families eaters. Only 7 ingredients and surprisingly simple. A great combination of Chicken and Pasta, this is one of my favourites. I am sure that the kids will love this one. You can also hide some extra vegetables in there as well. With a couple of changes this recipe could also suit Vegetarians too. So you see, it’s easy, versatile and tastes great. Enjoy!

Serves 4

Ingredients

250g dried maccheroni pasta
4 cooked chicken drumsticks
100g baby spinach leaves
300ml light thickened cream
¾ cup semi-dried tomatoes
1 ½ cups grated parmesan cheese
1 cup grated mozzarella cheese

Method

Preheat oven to 200°C. Lightly grase and line a 5cm-deep, 20cm x 28cm (base), 8 cup capacity baking dish.

Cook pasta in a large saucepan of boiling, salted water for 10 minutes or until tender.

Meanwhile, remove chicken meat from the bone. Thinly shred meat. Discard bones.

Drain pasta and return to saucepan. Add chicken, spinach, cream, tomatoes and 1 cup of parmesan.

Toss until well combined. season with salt and pepper.

Spoon mixture into prepared dish. Top with mozzarella and remaining parmesan. Bake for 20 to 25 minutes or until golden. Spoon pasta bake onto serving plates. Serve.

Hints

Maccheroni can be substituted for another type of pasta such as penne or rigatoni
Line baking dish with non-stick baking paper
Can be re-heated next day at home or work
Great for parties
Use different varieties of cheese
Read the cooking directions on the pack of pasta you use
Can be cooked in smaller baking dishes or individual dishes

Orange Glazed Chicken A Hearty Meal for all of the Family

I ripped this recipe for Orange Glazed Chicken out of a magazine in 1986! That’s 28 years ago, and I still have it along with all of the other oldies. Orange Glazed Chicken is not something that we hear about all that often. It’s nice to try something different every now and then. Some of the ingredients may need to be specially bought. Once you have them, you’re ready to get cooking. I am sure that this will impress both friends and family because it is unusual. So follow the recipe and in next to no time you will have created a meal the whole family will enjoy.

Orange Glazed Chicken Recipe

Ingredients

1 x 1.5 kg Roasting Chicken

Seasoning:

250g sausage meat
1 cup fresh breadcrumbs
1 rasher bacon, chopped
1 chicken stock cube, crumbled
Grated rind and juice of ½ orange
1 tablespoon orange marmalade
1 onion, chopped

Method

Mix all seasoning ingredients together.
Fill into chicken cavity

Brushing Sauce:

Grated rind and juice of ½ orange
2 cubes chicken stock, crumbled
1 tablespoon orange marmalade
1 tablespoon melted butter
½ cup water

Method

Mix all ingredients together.
Brush liberally over chicken.
Bake 180° C for 1½ hours, brushing 3-4 times during cooking.
Microwave Instructions
Cook chicken on High for 10 minutes then Medium for 20 minutes
Allow to stand for 10 minutes
Turn chicken every 10 minutes during cooking
Omit the ½ cup of water in the brushing sauce, when using the microwave

Hints

Chicken is cooked when a skewer inserted into the inner thigh reveals clear juices
Ideals for serving with salad, steamed or roast vegetables
Try making the Glaze and use on chicken thighs instead of a whole chicken
